Newer nuvi may have different way of turning on tracking.

On my nuvi 2577, it works like this :

On main screen press the volume button.
On Master Volume page press and hold top right hand corner until Diagnostic Page appears.
Look for Diagnostic Logging, press General -> Start Recording, tick gpx, top left button -> Start

Another way is to View Map, press Speed button,
Press and hold the Speed number until the Diagnostic Page appears.
Then repeat with Diagnostic Logging above.

The tracks will be saved to a Log folder in the nuvi as xxx.gpx
